Ingredients:

For 4 people:

  • 4 slices of loaf bread
  • 100g of anchovies in oil
  • 1 small aubergine
  • 1 small red pepper
  • 1 small onion
  • Olive oil
  • Black pepper
  • Salt

Elaboration:

To make roast beef toasts with anchovies, first we wash the vegetables well, dry them and impregnate with olive oil. Season and roast them at 180º C for 45 minutes, turning each piece every 20 minutes so that it cooks evenly. The onion will take 20 more minutes, so we must introduce it before or leave it longer once all the vegetables are done.

Once baked, remove on a tray and cover so that the vegetables sweat and their peeling is easy. This trick is essential to avoid that the vegetables sometimes peel badly.

Once peeled, we chop and season. Season with olive oil and pepper.

We toast the slices of bread and arrange the vegetables and anchovies on them.
