Ingredients:
For 4 people:
- 350 g. of roast chicken meat.
- 150 g. of cooked ham.
- 300 g. of potatoes.
- 1 eggplant.
- 2 carrots
- 1 red pepper.
- 1 onion.
- 2 cloves of garlic
- 1 teaspoon of paprika.
- 1 ripe tomato
- 2 eggs
- Olive oil.
- Salt.
- Freshly ground black pepper.
- Butter.
- Bread crumbs.
Elaboration:
To prepare this meatloaf, we put the potatoes to cook in a pot
with water and salt. Once tender, drain the water, peel, and mash with the
help of a fork. We add salt and mix it with the finely chopped cooked ham.
Peel and chop the onion, carrot, eggplant, garlic, and red
pepper, all very small. We fry everything in a saucepan with a little
olive oil. When the vegetables are well poached, add the boneless and
shredded chicken meat and sauté the whole. Then, we add the paprika and
the grated tomato. Season with salt and pepper and continue to fry until
the tomato is well cooked.
We drain the fat from the meat sauce and mix it with the mashed
potato and vegetables. Next, we add the eggs and mix well.
We spread the inside of a mold with butter. Sprinkle with
breadcrumbs and add the meat, potatoes, and vegetables filling. Bake the
cake at 150º C until it is set and golden.
When we have the chicken pie at its point, we let it warm to
room temperature before unmolding it very carefully.
This
meatloaf can be served both hot and cold.
