Ingredients:
For 4 people:
- 6 eggs.
- 1 onion.
- 1 medium zucchini.
- Salt.
- Olive oil.
Elaboration:
To prepare these zucchini omelets, we start by washing the
zucchini and cutting it into thin slices. Next, we peel the onion and cut
it into small cubes.
Sauté the onion in a frying pan; Once poached, add the
zucchini slices and cook for about 5 minutes. We put to the point of salt
and drain the oil.
We beat the eggs and add a little salt. Add the zucchini to
the beaten eggs and mix well.
We put the pan back on the fire with a little oil and, when it
is hot, we add the whipped mixture. We cook over low heat and, when we
obtain the desired set point, we turn it over with the help of a large
plate or a specific utensil.
We
brown the other side and remove it. It is important that the tortilla rests
for a few moments before tasting it.
