Ingredients:
For 4 people:
- 300 g. of cooked chickpeas.
- 1 onion.
- 50 g. of breadcrumbs.
- 3 large garlic cloves.
- Chopped parsley.
- Olive oil for frying.
- 1 teaspoon ground coriander.
- ½ teaspoon ground cumin.
- ½ tablespoon of baking powder.
- Ground pepper.
- Salt.
Elaboration:
To make chickpea croquettes, we start by grinding the hot
chickpeas together with onion, breadcrumbs, parsley, and garlic cloves.
Add the coriander, cumin, salt, and ground pepper beat until
leaving a fine paste. Let it rest in a bowl for at least 40 minutes.
