Ingredients:

For 4 people:

  • 300 g. of cooked chickpeas.
  • 1 onion.
  • 50 g. of breadcrumbs.
  • 3 large garlic cloves.
  • Chopped parsley.
  • Olive oil for frying.
  • 1 teaspoon ground coriander.
  • ½ teaspoon ground cumin.
  • ½ tablespoon of baking powder.
  • Ground pepper.
  • Salt.

Elaboration:

To make chickpea croquettes, we start by grinding the hot chickpeas together with onion, breadcrumbs, parsley, and garlic cloves.

Add the coriander, cumin, salt, and ground pepper beat until leaving a fine paste. Let it rest in a bowl for at least 40 minutes.

We make balls with the mixture in a very homogeneous way. If the mixture is soft, add some more breadcrumbs. We put the oil in a frying pan and, when it is very hot, we fry the croquettes. We leave on absorbent paper to degrease.
