Ingredients:

For 4 people:

  • 6 small potatoes
  • 2 carrots
  • 2 red onions
  • 1 zucchini
  • 250 g. of cherry tomatoes
  • 300 g. of goat cheese in a roll
  • 2 tablespoons of olive oil
  • Salt
  • Pepper

Elaboration:

To prepare grilled vegetables with goat cheese, we start by preheating the oven to 200º C.

Next, we wash the potatoes well and dry, wrap each one in a piece of aluminum foil and place them on a baking tray; Bake at 180º C until they are almost roasted, about 30 minutes; dry, let cool a little and remove the aluminum foil.

We wash the zucchini and cut it into slices; we wash the tomatoes, dry them and cut them in half; Peel the onions and cut them into slices and do the same with the carrots.

We grill the vegetables in batches, with a little oil and salt until they are all lightly browned on both sides and almost cooked.

We turn on the oven grill. We peel the potatoes, cut them into slices approximately one finger thick and also go through the grill with a few drops of oil and salt until they are golden brown on both sides.

We divide the vegetables into individual plates, add salt to them and place a slice
of goat cheese on them and in the center. Gratin in the oven until the cheese melts and the surface is lightly browned.
