Ingredients:

For 6 people:

  • 2 envelopes of curd
  • 2 eggs
  • 250 g of cream cheese
  • 250 g of blueberries
  • 100 g of raspberries
  • 150 g of sugar
  • 1 liter of milk


For the base:

  • 1 ½ package of golden maria cookies
  • 140 g of butter at room temperature
  • 60 g of flour
  • 100ml milk

Elaboration:

For the base of this cheesecake with blueberries: crush the cookies and mix with the flour, butter, and milk. We try to make it very loose and compact. We line a wide mold on the base and the walls and secure it with the hand or a spoon, as well as on the sides until the middle of the mold. We put it in the oven for about 10 minutes, at 180ºC previously preheated, until it is very golden and done.

For the blueberry cheesecake filling: we divide the milk into two parts. We heat one of them and the other we mix it with the curd. When it starts to boil, we pour the milk with the powdered curd and stir vigorously until it begins to thicken. Next, we add the sugar and stir. When it is warm, add the cream cheese and the two eggs, cook at low temperature for a couple of minutes without stopping to stir.

We pour the filling into the base, add half of the red berries and reserve the rest to decorate.

Finally, we bake the cheesecake for 15 minutes at 200º C. Let it cool, unmold and serve.
