Ingredients:
For 4 people:
- 1 chicken in pieces.
- 250 g. of onion.
- 2 cloves of garlic
- 200 ml. cream.
- 5 g. ginger.
- 200 g. of mushrooms.
- 200 ml. of chicken broth.
- 2 tablespoons of olive oil.
- 1 level tablespoon of curry.
- Olive oil.
- Fresh coriander
- Freshly ground pepper
- Salt.
Elaboration:
To prepare this chicken curry recipe, we cut the chicken into
small pieces, season, and fry in a saucepan with a generous splash of olive
oil. We reserve the pieces that are browning out of the casserole.
When it is golden brown, remove it from the heat, discard the oil , and reserve the casserole.
Peel and finely chop the onion, fry it in the same saucepan
until it is poached and brown over medium heat.
Then add the finely chopped peeled garlic and ginger, sauté and
pour the washed and cut mushrooms over this sauce. Sauté over medium heat
and when the mushrooms finish releasing their juice, add the fried chicken.
Then we add the cream and the curry powder. We stir well.
Add the
chicken and cook covered, stirring occasionally until the sauce thickens a bit
and the chicken is cooked. We serve the chicken curry hot and, if desired,
sprinkle with fresh chopped cilantro.
