Ingredients:
1 onion.
1 leek (the white part).
1 red pepper.
1 green pepper
2 carrots
2 potatoes
4 ripe tomatoes.
2 cloves of garlic
½ glass of dry white wine.
Olive oil.
Salt.
Elaboration:
To prepare this vegetable soup recipe, first of all, we wash all the vegetables. Afterward, we peel and cut the leek, onion, carrots, garlic, and potatoes into small pieces.
We put a couple of tablespoons of oil in a pan and fry the
onion, garlic, carrots, and leek. When it begins to brown, add the peppers,
also cut them into pieces, and season. Let it fry for a few minutes over low
heat.
Then we add the potatoes that we had cut into small pieces.
Add the cut tomatoes and sauté for a few minutes.
Next, we add the wine and cook for a few seconds until the
alcohol evaporates. Cover with water and cook for 45 minutes over low
heat.
We
rectify the salt and serve the hot vegetable soup.
