  • 4 wrap wafers
  • 300g of sliced ​​smoked salmon
  • 50g of mixed lettuce leaves
  • 2 eggs

Sauce:
  • 2 yogurts
  • 1 branch tomato
  • 1 small spring onion
  • 1 tablespoon of fresh coriander leaves
  • Salt
  • 1 tablespoon of oil extra virgin olive (20g)

Elaboration:

We make the sauce first. We leave the yogurt on a strainer until we get a more full-bodied dairy paste. Peel the tomato, gin it and chop it into small cubes. We peel the onion and do the same operation. With the help of a very sharp knife, we chop the coriander leaves very often. Mix these ingredients in a bowl with a pinch of salt, a spoon of olive oil, and reserve.

In another bowl, beat the eggs until they are foamy and add a pinch of salt. On a large non-stick frying pan, curdle the eggs into a thin omelette, remove and once warm, cut into 4 equal parts.

 We heat the wafers in a pan, oven, or microwave, and on its surface, we arrange the salmon, the omelette, and part of the sauce. In turn and on them, we place the lettuce leaves along with the wrap.

We roll upon itself, pressing the ingredients at each turn and leaving them trapped inside. Cut into portions and serve with some extra lettuce leaves.
